A $100 non-refundable deposit will reserve your side of pork with the remainder of the cost made payable upon receipt of the side. Price is $5.00/lb based on hanging weight, which is the weight of the side after slaughter but before cutting and wrapping. The average hanging weight is 90 lbs with your take-home or "freezer weight" being approximately 75% of the hanging weight based on the type of cuts requested (for example, bone-in or boneless roasts). If you would like to buy the side as a carcass so that you can butcher it yourself or use a butcher of your choosing, let us know and we will provide specific pricing. The $5.00/lb includes slaughter, cutting, and wrapping to your custom specifications. Curing (i.e bacon and ham) is an additional $1.75/lb, sausage an additional $2.00/lb, and smoked sausage is an additional $3.75/lb. The main advantage to buying in bulk is that you pay a flat fee per lb regardless of the quality of cut as opposed to by the cut. For example, if you bought the equivalent of a side of pork in individual cuts piece meal, you would be paying an average price of $7.50/lb as opposed to the flat fee of $5.00/lb. It's also a great way to explore new recipes and cuts you may have never heard about.
